We created this white couverture chocolate to add new depth to the Indulgent Creations range’s aromatic palette, and it stands out for its notes of dairy milk subtly underpinned with vanilla. The name Waina comes from the word “vaina”, which means “vanilla bean” in Spanish, and this aromatic note is certainly in evidence in this white couverture.
Waina 35% is made from cocoa beans that have been carefully chosen by Valrhona’s experts and their local partners. Waina belongs to the certified range and is made exclusively from the best organic and fair trade ingredients (certified by Fairtrade/ Max Havelaar and Agriculture Biologique). This is one example of the ways Valrhona is committing to sustainable development.
The concentrated milk and liquorice notes that emerge courtesy of the cane sugar give Waina a unique profile which brings out the very best in fruity and spiced desserts.
