Caraque was the first blended chocolate Valrhona ever made all the way back in 1970. Today, it is one of the brand’s iconic products, alongside Guanaja and Extra Bitter. This chocolate offers more proof of the Valrhona team’s meticulous expertise, and its balanced flavor appeals to all kinds of professionals.

So that taste is always a source of inspiration, we have used a research-based co-creation approach to give each couverture a specific ambiance which will appeal to both your senses and your emotions.

I’ve always used Caraque. It is neither overly acidic nor overly bitter, and it is very good at retaining its flavor over time.
