Once again this year, a number of talented chefs have put all their expertise, creativity and passion into rustling up some inspiring desserts. Throughout the year, we are going to meet the thirteen CercleV 2022 calendar winners!

David Vidal

We start with David Vidal, pastry chef at Scandic Laholmen in Strömstad, Sweden. After starting his career in restaurant kitchens, the chef found he was passionate about pastry. Guided by his taste for change and novelty, he decided to embark on a new adventure.

Nowadays, he even gives classes where he passes on his passion to as many people as possible! David likes to work with different textures and flavor profiles.

For the competition, the chef chose to make a dessert after his own heart by working with his favorite flavors, namely dark chocolate, hazelnut and coffee.

I chose to use Valrhona chocolate in my desserts because the wide variety of choice boosts my creativity
