COMPOZ: legal sales name
Legal sales names are automatically generated in the "DESIGNATION" section of the Valrhona LAB, in step with the proportions of each base.
As a reminder, the names of cocoa and chocolate products are defined by directive (EU) n°2000/36, and in particular the following names:
- CHOCOLATE means the product obtained from cocoa products and sugars containing no less than 35% total cocoa solids, including no less than 18% cocoa butter and no less than 14% dry non-fat cocoa.
- MILK CHOCOLATE means the product obtained from cocoa products, sugars and milk or milk products and which contains no less than: (i) 25% total cocoa solids, (ii) 14% milk solids, (iii) 2.5% non-fat dry cocoa solids, (iv) 3.5% milk fat, (v) 25% total fat (from cocoa butter and milk fat).
- WHITE CHOCOLATE means the product obtained from cocoa butter, milk or milk products and sugars, containing no less than: 20% cocoa butter and 14% milk solids, including no less than 3.5% milk fat.
The term CHOCOLATE may be qualified (DARK CHOCOLATE), provided the product contains no less than 43% total dry cocoa solids, including no less than 26% cocoa butter.
For each of the chocolate categories defined above, all conditions must be met to use the corresponding denomination.
If milk or milk products are replaced by PLANT-BASED INGREDIENTS, the names MILK CHOCOLATE and WHITE CHOCOLATE cannot be used.
No recipe containing a toasted buckwheat base may be called chocolate.
If the product does not meet any of these definitions, a descriptive name must be given. In this case, it is up to you to take responsibility for your creation’s legal sales name.
