Biography
She first started in the industry in Ferrara in 2010.
After attending Cast Alimenti, she spent three years working in Michelin-starred restaurants alongside chefs Heinz Beck and Gennaro Esposito.
She then moved to Rome, where she worked for two years in Gabriele Bonci's pastry shop, and developed a passion for all things sourdough and breakfast pastries.
In 2018, she moved to London and stayed for five years, working for Eataly's pastry store. This experience helped her to realize that her favorite part of the job is the ability to keep learning and sharing her knowledge with others.
In 2022, she returned to Italy to work for Davide Longoni for a year, and in 2023 joined Valrhona where her focus is on the Italian market.
