A new month means a new creation from the Cercle V calendar can be revealed! For May, the spotlight is on Baptiste Depoorter, who at 23 years old is already a pastry chef at Château de La Messardière, Saint-Tropez.

He describes his pastry as simple and tasty. He works with raw ingredients so that he can magnify their flavors. The chef works in perfect harmony with the valrhona brand’s values, in that he’s environmentally friendly, makes his creations from scratch in France, and all his ingredients stick to traceability guidelines.

His ring-shaped “Marina” dessert perfectly marries chocolate with raspberry. As well as playing around with different textures, it does something genuinely different with colors, creating a feast for the eyes and taste buds!
