To mark the start of the month, we are proud to present the Cercle V 2022 dessert for July. It has certainly met with success! Anthony Legouez is committed to offering indulgent but low-sugar pastries that respect the seasons. His creations have characteristically clear, confident flavors, of which there are never more than four! He started his career with Valrhona chocolate and soon loved it in all its forms, from fruity to woody and tangy, discovering real pleasure in finding ways to use it.

The dessert consists of a shortbread round surrounded by three milk and dark chocolate mousses (hence its indulgent qualities!). Three quenelles of Edwart mango sorbet create an icy freshness. And finally, the chocolate sprinkled with fleur de sel wafer biscuit adds a nice crunch. The results are stunning!
