« The Birth of Taste » 2009-08-27 - FRANCE - Ecole On 3 July last, in Dijon, Camille Schwartz defended her thesis titled: "Dynamics of Taste Preferences: Effects of Exposure and Impact on Food Appreciation". Opaline (Observatory for Infant and Child Taste Preferences) is a research programme which aims to gain better understanding of the development of Taste and how it evolves in children, notably, by studying early individual sensorial experiences from life in-utero to the age of two years old.The Valrhona Foundation supports the continuity of the work of this infant and children observatory, by financing part of Camille Schwartz’s work. This thesis aims to understand the behaviour of infants, the role of mothers’ diets and, subsequently, to discover how we develop our Taste preferences from childhood.Focusing principally on innovative methods for assessing infant organoleptic sensations, this research should pave the way for significant progress in this field...
